Protein Sweet Potato Pancakes Pre Workout * Ingredients. - 1/2 cup mashed #SweetPotatoes. (measure after mashing). - 2 tsp #Vanilla extract. - 1 tbsp #Cinnamon powder. - 1 tsp #FlaxSeeds. - 1/4 cup #Quinoa #Milk. - 1 Scoop 31g #Vanilla Whey Protein You can change for oats, coconut or almond flour. Or nothing, dont add milk to get a nice consistency. - 1 egg white. - #CoconutOil as needed. - #Organic #Agave Syrup. * Directions. - Sweet Potatoes. Peel and cut in slices. Boil them for 10 to 15 min or until is soft. Remove the water. I suggest that if you are a busy person like me, at the beginning of the week, boil or bake up some in the oven to have on hand all week. Sweet Potatoes are good as sides, or to make these pancakes! Also, if you are REALLY unprepared, you can microwave your sweet potato for 6 minutes. Let them cool. - Peel and Mash the sweet potato with a fork. - Add the vanilla extract, cinnamon powder, flaxseed, vanilla protein powder, 1 egg white and quinoa milk. - mix all the ingredients with your fork. - Heat a frying pan over medium heat, melt the coconut oil, and spoon 1/4 cup of the batter onto the pan or the amount you want. Let cook until you see bubbles forming and the pancake is firm enough to flip. Flip and cook for a while, watching carefully. - Serve with a sprinkle of cinnamon, or coconut, fresh fruit or splash of agave syrup for a real healthy treat!
