Pumkpkin Cheese layered mini pies Add these pies to you Thanksgiving and Christmas dessert table. This is a favorite in my home. Enjoy! 8 oz cream cheese 3 Tbsp granulated sugar 1/2 tsp vanilla extract 1 egg 10-12 keebler mini grahm ready crusts 2ND LAYER 2 eggs beaten slightly 3/4 c canned pumpkin 1/4 c sugar 3/4 tsp cinnamon 1/4 tsp ginger 1/4 tsp nutmeg 1/4 c milk WHIPPED CREAM AND PECANS ARE FOR GARNISH 1 can of whipped cream or any other you prefer 1/2 c pecans chopped or whole Dash of cinnamon Directions 1 heat oven to 350 degrees 2 Line up ready crusts on cookie sheet. 3 Beat softened cream cheese until fluffy. Add the 3 tablespoons of sugar,vanilla,and egg in 1st step,until combined well . 4 take mixture and distribute evenly into mini crusts. 5 In a large bowl combine 2 eggs,3/4 cup pumpkin,1/4 cup of sugar,cinnamon,ginger,and nutmeg,and milk. Mix all ingredients until well blended. May use mixer on slow speed. 6 Spoon Pumpkin mixture over the cheese mixture already in crusts. Evenly to the top of each crust. 7 Put in the oven and bake approximately 50-60 min. Depending on oven. Take out of oven and cool. 8 You may remove the cakes from each pan if you wish. Be careful removing them. use a knife to separate from pans. store in Fridge. 9 before serving top with whipped cream, a sprinkle of cinnamon, and chopped Pecans if desired! Of course he only had two 1/2 and I had one and 1/2. I want to take a few to my neighbors tomorrow they are so tasty!!! Thank you for such a wonderful recipe and I know Ill be making them again and again!
