Q. How do you know what a Thai coconut is? Is it the one that looks like a cream hut in shape? If so, how do you know when it it ripe? How do you cut it? A. Thai coconuts are white with a pointed top. The huge green coconut has been cut down, leaving an inch or so of the Coir insides. This is a Young or a Thai coconut. Not to be confused with the smaller, brown coconuts that are mature coconuts. Inside all that thick white Coir is a brown coconut, but its flesh is soft and young, the brown ones have hard flesh. The difference is that the mature coconut is saturated fat. But both are used in RAW. The Thai/young coconuts are more often used for their flesh and water but grated coconut is from the mature ones. There is no way to tell if its ripe. But more often you will find a bad one. So always buy an extra or two. You can tell its bad if once opened it smells off, if the white flesh is quite pink or lavender (tho sometimes it is and its not bad) and if the water tastes yuck. Best not to mix the water/flesh of several til you know that they are all OK. Opening a coconut is a learned skill. You can google for instructions in photos and videos that are very helpful. The mature coconuts have a different set of instructions so be sure if you have a Young or a Thai coconut that the instructions you are watching look like the one you have. There is a new coconut opening system out called Coco-Jack. I am impressed with it. Worth it if you open a lot of young coconuts. from Nomi Shannon
