Quick, name 5 vegetables you cooked in the last month. Can you? Most of us eat the same couple of vegetables cooked in the same way over and over. To eat more vegetables, first get out of the rut of your own version of same-old same-old broccoli. Start by identifying new vegetables to try. Roasting or grilling any vegetable changes its flavor. Even if you think you dont like broccoli or brussel sprouts, try roasting them in the oven. I bet you will like them! I simply toss a mixture of whatever veggies I happen to have on hand(bell pepper, zucchini, eggplant, mushrooms, cherry tomatoes, green beans, etc.) with Mrs. Dash Steak Seasoning (or a sprinkle of garlic powder, dried Italian herbs, and McCormicks ground smoked black pepper) & low sodium soy sauce. Place on parchment lined baking sheet and roast at 425-450 degrees for 30-45 minutes (stir once after 20 minutes). Thats it! Delicious! - Carolyn
