Quickie Pizza Dough This recipe makes enough dough for two large pizzas, but if theres only one or two in the house you can always roll out half the dough, wrap it in clingwrap and freeze it for another time. And I ask you, how does it get better than this? Makes two 35cm bases INGREDIENTS • 2 cups (320g) self-raising flour • 1 cup plain or Greek yoghurt METHOD Place the flour and yoghurt in the bowl of a food processor (fitted with a dough blade if you have one). Mix together for about 20 seconds, until the dough comes together in a ball. Turn the dough out onto a floured benchtop and knead for 3 minutes until the dough becomes as soft as your ear lobe. It will be quite sticky. Rest it for up to 30 minutes if you have the time, otherwise roll it out if your hunger wont let you wait a minute more. Top it with tomato passata or pizza sauce and your favourite pizza toppings. Bake the loaded pizza at 220°C (fan-forced) for 15-20 minutes, and add a couple more minutes if you prefer a thicker crust.
