RECIPE CHILLI CHICKEN STIR FRY INGREDIENTS: 1 tsp mild sweet chilli paste 2 tbsp hoi sin sauce 2 tbsp soy sauce or patis 2 tbsp honey 2 tbsp rice vinegar 3 cloves garlic, crushed 1 tsp grated fresh ginger 3 small red chillies, sliced 800g chicken thigh fillets, quartered 2 large onions 2 bunches asparagus 2 tbsp peanut oil 1 bunch baby bok choy, shredded METHOD: Combine sauces, honey , vinegar, garlic, ginger and chillies in a large bowl, add chicken mix well, cover refrigerate 3 hrs or overnight. Halve onions, cut into wedges, snap off and discard tough ends of asparagus, cut asparagus into 4 cm pcs, boil, steam or microwave asparagus until just tender, rinse under cold water, drain,,, Drain chicken from marinade, heat half of the oil in wok or large pan, add onions, stir fry until onions are soft , remove .. Heat remaining oil in wok , add chicken, stir fry until lightly browned. Add marinade, bring to boil, cover , simmer, about 10 min or until chicken is tender, stirring occasionally, add onions, asparagus, bok choy , cook, stirring until bok choy is just wilted. ENJOY!!!
