RECIPE FARRO SALAD for 6 people 270 grms farro 300 grms fresh string beans 1 courgette 1 onion medium 1 red pepper roasted, peeled and deseeded Olives finely chopped (a good handful) Capers chopped (a good handfl) 1 large can tuna shredded apart Sundried tomatoes chopped finely 3/4 gherkins chopped finely Dressing Good quarter cup apple cider vinegar or red wine vinegar Qood quarter cup extra virgin olive oil 1 tsp mustard pepper and salt Boil Farro in salted water. There are various differing opinions on how to cook this. I have cooked this countless times over the past 8 or so years and the results I obtain are good. There is no need to soak overnight, if you decide to do so you basically just cut out 10 minutes cooking time. If you do not soak it does not mean that you will be cooking Farro for ever and a day. Just throw the farro in right from the start and let it boil. It should take around 25 mins. Depends on how you like your cereals. I cannot stand mush! Farro is lovely because it has a nutty taste. After 20 minutes, take out a grain, taste and check. Drain once done to your liking and put in a bowl. Let it cool. Add the rest of the ingredients and toss. Place ingredients of Dressing and whisk. Drizzle over the farro and mix well. Leave to cool and serve....truly a wonderful, healthy and totally delicious salad. NOW CONFESSION TIME - I CHEAT IN THIS ONE! I use a jar of 400 grms string beans and I also use these lovely jars of pickled roast peppers. Just take 4 pieces. A truly quick and lovely salad!
