RECIPE FOR CASSAVA CAKE: 2 lbs of grated cassava =4 cups of cassava 2 cups of light brown sugar 1 1/2 stick of margarine 1 tsp cinnamon 1 tsp all spice 1 tsp nut meg 3 1/2 tbs vanilla 3/16 tsp of salt (dash) 3 cups of fresh grated coconut milk, or 2 cans of coconut milk TOPPING: 3/4 cup of coconut milk 1/2 cup sugar ( light brown) 1/4 stick of melted margerine.....mix all together and set aside for when the cakes is starting to brown. INSTRUCTIONS: Combine all ingredients together, mix well ( melt the margarine before adding to mixture). Bake @ 375 degrees. Once the cake is set, it means that it is starting cook and will start to brown. Once it starts to brown, put the topping un top of the cake and leg it continue to bake until it is fully brown.
