RECIPE SALT AND PEPPER BUTTERFLIED PRAWNS INGREDIENTS; 4 x9 cm square wonton wrappers 1kg uncooked mdm prawns veg oil for shallow frying 1tbsp peanut oil 2 cloves garlic, crushed 1 small fresh red chillies , sliced 1 tbsp lime juice 2 tbsp mild sweet chilli sauce 3 green shallots, thinly sliced 2 tbsp sesame seeds, roasted SEASONING: 1/2 tsp blk peppercorns 1/4 tsp coriander seeds 3/4 tsp seasalt flakes 1/4 tsp lemon pepper seasoning METHOD: Cut wonton wrappers in half diagonally. Shell prawns , leaving tails intact, cut prawns down the back, cutting nearly all the way through , remove veins, flatten prawns lightly. Shallow fry wontonwrappers in hot veg oil in batches until lightly browned, drain on absorbent paper. Shallow fry prawns in hot oil in batches about 30 sec or until prawns are almost tender and gave changed colour , drain on absorbent paper. Heat peanut oil in wok or pan, add garlic. and chilli , stir until fragrant. Add prawns , juice, sauce and seasoning mixture, stir fry until heated through stir in shallots , sprinkle with seeds. SEASONING: Lightly crush peppercorns, and seeds add salt and lemon pepper! ENJOY!!!!
