RICE AND PEAS INGREDIENTS: 1/2 lb. peas 2lbs. rice 1 coconut 2 small stalks escallion 1 large sprig thyme 2or3 cloves garlic 1 whole scotch bonnet pepper salt to taste small piece ginger(optional) 1/4 tsp. sugar(optional) METHOD: 1. Soak peas overnight in a large container with the garlic 2. Cook peas until soft 3. Add coconut milk that you have extracted from coconut through blending with warm water and straining. 4.Add escallion, thyme, pepper, salt, sugar and ginger and allow the milk to bowl for about 3-5 minutes. 5. Add rice. ensure that when you add the rice you stir the pot with a fork and you can see your rice through the liquid. if you cannot add more rice. 6. After the liquid drys from the rice reduce heat and let the rice steam. IF THE RICE IS NOT FULLY COOKED SPRINKLE SOME MORE COCONUT MILK ON THE RICE AND LET IT FINISH COOK. PLEASE NOTE NEVER USE A SPOON TO STIR RICE, ALWAYS USE A FORK TO ENSURE BEST RESULTS.
