ROAST TURKEY SALAD-BY CHEF ROBERT IRVINE-MUSCLE & FITNESS-JANUARY 2014 info per serving-331 calories/27g protein/18g fat/13g carbs ingredients-1lb turkey breast/salt & pepper to taste/1/4 cup red onion, thin sliced/1/2 cup garbanzo beans/1/2 cup green beans for dressing-1/2 cup sugar free, cranberry juice/1lime, juiced/1 tbsp siracha/1 tbsp garlic, minced/1/4 cup red wine vinegar/1/4 cup grapeseed oil directions-Cube leftover turkey into /4 inch pieces. If youre making this from scratch preheat oven to 300 degrees. Lightly season turkey breast with salt and pepper and roast for 1 1/2 hours or until turkey reaches an internal temperature of 165 degrees. To create dressing in a bowl whisk together cranberryjuice, the juice of 1 lime, siracha, garlic, vinegar and salt and pepper. Mix well, then whisk in oil.Toss turkey cubes together with vegtables and beans in a bowl.Add dressingand mix again. Portion saladinto four servings and enjoy.
