ROASTED BEET PENNE. 3 whole beats peeled and put extra virgin olive oil on them with salt and cover in foil and cook 400 for 1 hour Unwrap and cool and then put in food processor with: 1-3 cloves minced garlic 1/2 cup toasted walnuts 1/4 cup extra virgin olive oil 1 cup Parmesan cheese Salt Cook pasta and when done drain and add beet pesto and mix well Let cool then add fresh basil and green onion When ready to serve top with fresh Parmesan cheese and chopped toasted walnuts **I would reduce oil AND Parmesan and of course use WW pasta for 90/10- Just got recipe today - think Ill try it tonight !
