RUSSIAN CHICKEN Ingredients: 1 bottle (8 ounces) Wishbone RED Russian dressing* (regular or low calorie) 1 jar (12 ounces) apricot jam or preserves 1 envelope dry onion soup mix 1 to 2 pounds chicken breasts or legs Directions: Preheat oven to 350 degrees. Put jam in a microwave safe bowl, and microwave on high until melted. Remove from microwave, then add dressing and soup mix, stirring well to make sure all ingredients are combined. Place chicken in an ungreased 9x13 baking pan. Spoon dressing mixture over chicken. Cover with tin foil, and bake for a total of one hour, removing foil after 1/2 hour, and baste with dressing mixture. Bake uncovered for an additional 1/2 hour, or until chicken is done. If using boneless chicken breasts, reduce cooking time to a total of 40 minutes, removing foil, and basting with dressing mixture after 20 minutes. Bake uncovered for an additional 20 minutes, or until done. *IMPORTANT! Make sure you use the dark red color Russian dressing in this recipe, NOT the pink dressing with pickle relish in it!
