Raspberry & White chocolate muffins Makes 12 100g fresh raspberries cut in half 100g white chocolate buttons broken 300g Plain Flour 150g golden caster sugar 50g unsalted butter 2 tbsps Baking powder 1tsp vanilla essence 225ml milk 1 egg Preheat oven to 180 Sift flour & baking powder into a large bowl & stir in sugar. Melt butter in the microwave for 30 secs. In a separate bowl whisk egg and add vanilla essence, butter & milk. Add to dry mixture and stir in. Gently fold in raspberries & chocolate with a metal spoon. Fill your muffin cases 2/3 full & bake for 30 mins or until browned.
