Rats, foiled again! After being sick for a week and putting off my Christmas Eve tamale dinner, I thought I could pull it off today. But noooooooooooo! First I tried to render tallow in my pressure cooker following one of those fascinating Moderniste recipes only to discover that my mason jar was taller than my pot. Okay fine. I dumped the pureed fat into a pot on the stove to render it the old fashioned way (which actually is quicker) and promptly wondered how the heck I would know when it was done without any cracklings...I winged it. I had my lovely shredded beef cooking down with my ranchero sauce for the tamales and HOOOWEEEEEE did that come out buena!!!! Then I set myself up to assemble my cheese enchiladas and lo and behold! My grated queso, still in the bag, unopened, was moldy. Sell by date? January 30th. WTF Universe? So I guess maybe its going to be a Sunday dinner? I will prep as much as I can today, but at this point, giving up and going back to bed looks like a rather rational response. ¿Como se dice *sigh* en español?
