Ready to kick off our first 2015 Clean Eating Challenge! If you havent joined in, its not too late. Food prep complete for an entire week. Seriously, once you start meal planning & prepping, theres no stopping you with creativity, organization and clean eating. Im a busy mom of 2 boys, a business owner AND a part time fitness coach. I KNOW how important it is to organize over the weekend. Heres a sampling of what Ive prepared today and what well be working on in our private support group this week! * Prepped & stored broccoli, cauliflower, celery, carrots, red cabbage, red peppers, 2 varieties of kale, parsley and cilantro. * Combined veggies/fingerling potatoes for a pot roast (boys requested) * Combined spinach & veggies for egg muffins * Cooked up some kidney beans for my salads and made sure that the cabbages were ready to add QUICKLY (I get lazy with salads). * Planned out Sunday-Friday meals which involve the crockpot a lot this week.
