Really easy, really delicious Linguine Vongole to serve 4. All you need is good pasta, good shellfish and 10 mins. Sautée one diced medium golden onion in olive oil. Once softened, add 4 diced cloves of garlic (or 6 if youre part of the anti-vampire Harding clan like us) and 2 small red chillies and continue to cook. Put Linguine on in a separate pan for 5 mins (or whatever the specified time is if not) Add 10 tomatoes (quartered) to the onions along with 2lb of the best clams you can find (can substitute with mussels or other shellfish if need be). Put lid on and cook for 4-5 mins until all clams are open but do not overcook. Once opened, add a splash of white wine, a generous bunch of flat parsley and a squeeze of lemon juice and serve the sauce on top of the drained pasta. Salt, pepper and Parmesan to taste. Enjoy!
