Recipe Corner Stuffed Green Peppers This mouth watering recipe is a sure hit with the family! Ingredients 8 green bell peppers, tops cut away (save tops) and discard seeds 2 tablespoons olive oil 1 cup finely chopped yellow onion 3/4 cup finely chopped green bell pepper 1 pk BeefMasters Ground Beef 1 pk BeefMasters Premium Ground Pork 1 tablespoon minced garlic 1 teaspoon brown sugar 1/4 teaspoon Season All 1/2 teaspoon finely ground black pepper 1/4 teaspoon Smoked Paprika Dash of pepper sauce (optional) Salt to taste 2 cups cooked white rice refrigerated overnight 1 - 14 oz can of Diced Tomatoes 1 cup shredded Cheddar Cheese Water Directions 1. Preheat the oven to 350 degrees F. 2. In a large pot of boiling water, parboil the peppers until just tender, 2 to 3 minutes. Remove with a slotted spoon, drain and dry on paper towels. 3. In a large saute pan or skillet, heat the oil over medium-high heat. Add brown sugar and allow to bubble. Add the onions and chopped bell peppers and cook, stirring, until soft, about 3 minutes. Mix the beef, pork, garlic, salt, black pepper, smoked paprika and dash of pepper sauce and add to skillet. Cook until the meat is browned, stirring often to break up the lumps, about 6 minutes. Add the rice and diced tomato and stir well. Remove from the heat and adjust the seasoning, to taste. Pour enough water into a baking dish to just cover the bottom, about 1/8-inch deep. Stuff the bell peppers with the meat and rice mixture and place upright in the baking dish, "Plug" the top of the green peppers with the portion attached to stem. Bake until the peppers are very tender and the filling is heated through, 20 to 25 minutes. Remove the stem plug, discard and sprinkle the Cheddar Cheese on top. Allow to bake 5 minutes more or until cheese is melted. Remove from the oven and let rest for 10 minutes before serving. Bon Appetit!
