Recipe: Hyderabadi Chicken Biryani (Pakki dum biryani, I know kacchi too but this is the easier version.) To make this easier, lets divide this into three parts. If you have a stove with 3 or more burners you can do it all at the same time. Step 1: Deep fry thinly siliced onions until they are golden brown and spread it on a paper to absorb oil and turn crisp. Step 2: Soak basmati rice for 30 mins and cook it (1.5 cups of water for 1 cup of rice. You can use any rice if basmati is not available) Step 3: Marinate chicken with yogurt, salt, chilli powder, turmeric, ginger garlic paste, whole or powdered garam masala (cinnamon, cloves, bayleaves, coriander seeds, cumin seeds, peppercorns etc.) and cook it with some oil until all the water is gone and chicken is fully cooked. Dump all these in a tray adding some cilantro, mint and lemon and bake it in the oven for 30 mins. If cooking on a stove top, make sure you put a tight lid and seal it with dough if needed. Add color or saffron if you wish also.
