Recipe: Sweet Potato Pancakes Its no secret that I love pancakes. I make them all the time (to my husbands minor disappointment; he prefers waffles). Ill put anything in them and Ill put anything on top of them. The skys the limit, and thats what I love about pancakes. Theyre warm and hearty, perfect for any cool autumn day. Feel free to use sweet potato puree from a can, or the fresh stuff that you mashed yourself. Ingredients: ½ c. sweet potato puree ½ c. milk 1 egg 1 TBS. maple syrup ½ tsp. cinnamon ¼ tsp. nutmeg 1/8 tsp. salt 1 tsp. baking powder 1 ¼ c. whole wheat flour
