Recipe developers, like chefs or even artists spend a significant amount of their time dialing in and developing specific flavor profiles. This is why when it comes to substitutions, you can often get an ambiguous or tentative response. Though substitutions are often technically possible, they can change the much labored over flavor and/or texture profile of the recipe. And if the sub in question has not been tested, there is no way for a recipe developer to know the actual outcome.
