Recipe for Granola Bars Ingredients: Oats 2 cups Chopped Almond 1/2 cup Chopped Walnuts 1/4 cup Peanuts 1/4 cup Sunflower seeds 1/4 cup Watermelon seeds 1/4 cup Brown/ Golden Raisins 1/4 cup Cranberry 1/4 cup Black Raisins 1/4 cup Dates 8-10 *Flax seeds(optional) 2 tbsp Agave Nectar(Honey) 4 tbsp Oil 2 tbsp Grated coconut 3 tbsp Brown sugar (Optional) 2 tbsp Cinnamon powder 1 tbsp Soak all the dry fruits and nuts separately except walnuts (this to reduce phytic acid/tannins and to neutralise enzyme inhibitors). You can avoid this step but I prefer doing it. Dry it in a tissue. Lightly roast the nuts(almonds, peanuts, walnuts) to make the bars crispy. Just toss it in the pan for a minute. You need to dry roast the nuts separately. You need not fully roast it as it goes in for baking. Do not roast the sunflower and watermelon seeds. The nuts have to be chopped. Peanuts can be pulsed coarsely after its roasted. Pureed dates and Black Raisins helps in binding. *Flax seeds has to be ground in the mixie before adding.I found that EFAs in both chia and flaxseeds are destroyed once heated though the other health benefits are retained. You can skip it if you want to. Sweeteners : You can use any sweeetner of your choice. Healthy options include jaggery, agave nectar, apple sauce or soaked and pureed dates and raisins. Mixing two or three sweetners is a good idea. You cannot just use pureed dates because it needs a binding agent. Just make sure that the mixture is not dry else you cannot cut it into bars. Procedure Preheat the oven at 160 deg cel. Mix all the ingredients. You can line the baking tray with parchment paper or aluminium foil. Grease it before adding the mixture. After transferring the mixture to a baking tray, press it very hard with your palm (This is very important). Bake it for 35 minutes. Let it cool for an hour before you cut it into bars. If you are making smaller quantities you can bake for 25 minutes, Just make sure it doesnt get burnt ** There are lot of recipes available online but i have found them to be high in sugar and oil.
