Recipe for mince pie filling: 2ozs nibbled almonds (optional) 4ozs of grated apple juice and rind of 1 lemon and 1 orange 4ozs of grated carrot 12 ozs of chopped raisins (or leave as bigger ones if you like) 12ozs of chopped sultanas (or leave whole) 8ozs of chopped currants (or leave whole) 12ozs of demerera sugar (soft brown sugar) 8ozs of suet or grated frozen or melted butter 1teaspoon of nutmeg and 1 teasp of cinnamon 1/4 pint of brandy. Steep for at least 2 hours, keeps for an age and makes dozens of pies . Half the amount for less pies. :)
