Recipe for my spiced stiffed quinoa and brown rice peppers :) 6 med capsicums (red) half sachet (125 grams) of sun rice quinoa and brown rice 20 -30 mint leaves cumin 1/3 teaspoon chilli 1/2 teaspoon I lemon juiced I medium zucchini (grated) two carrots (grated) 1/2 tub cherry OR Roma tomatoes slices in half 100 grams lean lamb mince 2 garlic cloves 1 medium onion dice onion and crush up garlic and ad to fry pay with a little olive oil, once brown add lamb, chilli and cumin.. allow lamb to cook then add 1 cup of water...add in tomatoes, carrot and zucchini and rice mix, stir through and allow to cook on low whilst stirring for 5-8 mins.. Add more water if needed.. Add lemon juice and mint leave and simmer for 15-20 nins.... the mixture must be moist NOT dry Always taste anmd add more spice if needed.. slice tops off capsicums clean out the inside then scoop mixture in and add the top back on, drizzle with olive oil and pepper .. Oven should be at 180, cook for approx. 40 mins .... top with a spoon of low fat Greek yoghurt and serve with salad :)
