Recipe from the Cove - Week 29 BLT Potato Salad: What you need: 2 lb. new, red potatoes, quartered. ½ cup water ¾ cup real mayonnaise ¼ cup chopped, fresh chives 1 tbsp. white vinegar 8 slices bacon, cooked and crumbled 4 cups loosely packed, coarsely chopped Romaine lettuce 2 cups of cherry tomatoes, halves. Make it: Place potatoes in 2 qt. microwaveable casserole. Add water; cover with lid. Microwave on High 6 to 8 min. or just until potatoes are tender; stir. Let stand, covered, 5 min. Drain potatoes; rinse with cold water. Drain again. Mix mayonnaise, chives and vinegar in a large bowl until blended. Add potatoes and remaining ingredients, toss to coat.
