Recipe of the Week: BAKED VEGETABLE CASSEROLE! Courtesy of Joyce Beckner from our recipe book, The Rose Garden of Eaten. Serves 8-10 3/4 cup mayonnaise 1 10-3/4 ounce can cream of mushroom soup 2 large eggs 2 tablespoon flour 2 cups chopped raw broccoli 1 zucchini, sliced 1/2 pound fresh mushrooms, sliced 1/2 green pepper, diced 3/4 cup coarsely chopped cauliflower 1/2 large tomato, seeded and chopped 1-1/2 cups shredded cheddar cheese, divided Preheat oven to 350 degrees. In a large bowl combine mayonnaise with mushroom soup. Add eggs and flour and mix well. Add all raw vegetables and 1 cup of the cheese. Mix well. Pour into a lightly greased casserole. Top with remaining cheese. Bake for 45 minutes to 1 hour. (You may also add any other chopped raw vegetables and olives.)
