Recipe of the Week! Let us Know What You Think.. Stir-Fried Beef with Silky Leeks Serves 4 Ingredients: 2 pounds flank steak, trimmed 3 tablespoons lite soy sauce 2 teaspoons brown sugar 2 teaspoons cornstarch 1 tablespoon extra-virgin olive oil Leeks, rinsed and trimmed, all but 2 inches of green removed Sauce: 2 tablespoons lite soy sauce 2 tablespoons brown sugar 1 tablespoon hoisin sauce 2 teaspoons sesame oil Procedure: Slice beef against grain into thin even slices 1/8 inch thick. Cut slices crosswise into pieces about 2-inches long. Combine soy sauce, sugar, cornstarch and oil, whisking until smooth. Toss with beef. Cover and marinate overnight in refrigerator. Cut leeks crosswise into 2-inch lengths. Rinse and drain thoroughly. Set aside. Blend sauce ingredients thoroughly. Set aside. Heat a large saute pan over high heat. Add oil and heat to 350 degrees. Stir beef in marinade and then add oil. Sir slowly to separate the slices, after 30 seconds remove the meat. Wipe out pan and return over high heat. Add 2 tablespoons oil and swirl to coat pan. Add leeks and stir-fry briskly, about 20-30 seconds. Season the leeks with salt and sugar then stir-fry for 30 seconds until soft. Add meat toss to combine. Add sauce and mix. Stir and bring to a boil.
