Recipe of the week: FRIED COCONUT CHICKEN Ingredients- 2 Organic Free range Chicken breast (butterfly them in half) 1/2 cup almondmeal/flour 1/2 cup unsweetened shredded coconut 1/8 teaspoon sea salt 1 egg 3 tablespoons coconut oil Directions- 1.Mix almond meal and coconut and sea salt together 2.Beat eggin seperate bowl 3.Dip chicken breast in egg and then roll in dry mixture 4.Heat an iron skillet over med heat and add coconut oil 5.Pan fry chicken until fully cooked Serving Sizes Female- 1 to 1.5 butterfly chicken breast Male- 2 butterfly chicken breast (equals 1 full breast)
