Recipe time! This is the Speedy No-Knead Bread. 2-1/2 C regular flour 1/2 C wheat flour 1 handful of oat meal 2-1/4 tsp instant yeast 1-1/2 tsp salt Combine all of the above in a bowl and mix with 1-1/2 cups water. The dough will have a shaggy appearance. Cover with plastic and let rise at least 4 hours (can be up to 8) at 70 degree room temp. Lightly oil your hands and fold dough over gently once or twice; recover with plastic and let rise for 1/2 hour. Meanwhile, heat oven to 450 degrees and put a CAST IRON skillet w/lid in oven as it heats. When ready, remove skillet and put dough in skillet, cover with lid and bake for 30 minutes. Remove lid and bake 15-20 minutes more. You can get creative and add your favorite spices to the bread: rosemary, basil oregano...
