Recipe time! We came up with the slaw and stole the salad idea from Waitrose. My boss has apparently been making the coleslaw lots after I gave him the recipe, hah! Whichever you make, make a massive bowl and have some the next day. They’re filling enough to have as main accompaniment, skipping any rice, pasta or potato or bread. . Beetroot, cabbage and Bramley apple salad One beetroot (raw) 1/3 to 1/2 a red cabbage One Bramley apple Balsamic vinegar Some nice olive oil Salt & Pepper - Simple as anything... - Thinly slice cabbage - Grate beetroot (you will look like a murderer) - Core apple and chop into small chunks (don’t bother peeling it) - Mix it all up in a bowl - Add a good glug of balsamic vinegar, a small glug of nice olive oil, and some salt and pepper - Done! . Easy healthy coleslaw (that even I like) Some cabbage (red, white or both), sliced thinly Tin of sweetcorn, drained Some carrot, grated Some cucumber, sliced into little sticks or pieces Some sliced red onion or spring onion if you like Natural yoghurt (soya works) Bit of vinegar Salt & Pepper - Chuck all the veg in a bowl. - Add a couple of spoons of natural yoghurt, not too much as it goes further than you’d think (I use soya yoghurt as I’m a lactofail type) - Add a small splash of white wine vinegar too. We tried cider vinegar and it was ok but a bit too sweet. - Quick twist of salt and pepper - Taste, if ok serve, if not add more yoghurt or vinegar ‘til you think it’s dressed right. - Done!
