Regional Foods Express Local Culture- Regional varieties of food before industrialization of agriculture. Local consumers might, for example, enjoy the subtle differences of flavor that could be distinguished between grass butter and hay butter or May cheese and Michaelmass cheese which could be found only in their small region. ( Joan Thirsk Our Forgotten Past; Seven Centuries of Life on the Land.) This seasonal diversity is very much a part of a healthy, organic community offering local production. As stated my John Horvat in Return To Order however, ...local production has come to mean many different things to different people. Indeed, there are those who have turned local production into an ecological cause, a healthy alternative or a political statement. Such local initiatives have little to do with healthy localism... The principle presupposition of authentic local production is a close interrelationship between producers, inhabitants and the locality. There must be that turning inward by which people use their own local resources to make products suited to their tastes and oriented toward the perfection of society. In this sense (i.e., perfection of society), demand should influence production more than production determining demand. By constantly adjusting are materials to local tastes, producer and consumer should become the co-creators of goods... Example; A local cuisine develops when chefs constantly adjust local dishes and native ingredients to reflect what local people like.
