Seen this news article yet? Its an interesting piece and holds a few good pieces of information.... Largely from the perspective that heated, cooled, then re-heated pasta can have a lower GI, 50% lower. This is good as anything to stop wild fluctuations in blood glucose can be good for many people in an attempt to manage blood glucose levels better. What it will not do is hold on to calories, make them disappear, or do anything magical to make the pasta less caloric. It will likely fill you up for longer, thus making you hungry less soon, which can be very beneficial on a diet. The same is also true for potatoes, heating them then letting them cool does a similar thing, makes them have a lower GI, compacts the glucose molecules, then adds a more resistant starch structure to them. This could also be the same for other starch sources, but I would be hypothesising as I havent read anything specific on other starches. So, control blood glucose better with re-heated pasta, if you can be bothered, just dont forget them veggies, as veggies are king for your carb intake!! bbc.co.uk/news/magazine-29629761
