Remember my post about those go-to easy dinners? I have another... These paleo tortillas are super easy to whip up, and you can fill them with anything!!! We had leftover chicken in our fridge and we decided on tacos tonight! My kids love them, and they are great leftover, even cold. They hold up really well too, they have almost a crape consistency. Whisk all ingredients (make sure to melt your butter or ghee), then cook in a nonstick pan on medium heat. Put roughly 1/4 cup into the pan and move the pan in a circle to spread the batter. Flip when it bubbles in the center and the edges turn up. ☺️ I quadruple the recipe for our family of 5 and we always have leftovers I havent tried them as Crapes, but Im thinking relive the garlic powder, add cinnamon and vanilla... I bet they would be to die for!
