Reposting because I tried this today and it is so damned good! I knew it wouldnt be spicy enough for us so I doubled the red curry, right off the top. I used regular chicken broth. We like garlic so I added an extra clove of garlic, just to be sure. Probably couldve added more. Then, since I had an extra teaspoon of fresh ginger after I grated it, I threw that in, too. And, when all was said and done, I tasted it and decided it needed an extra tablespoon of lime juice. Sooo good! And so happy there are leftovers!
