Rhubarb Bread: 2 3/4 cup flour, l egg, l l/2 cup packed brown sugar, l tsp soda, l tsp salt, l cup buttermilk (or sour milk w/l heaping Tbsp lemon juice) l/2 cup cooking oil, l tsp van, l cup finely chopped rhubarb, & 2 Tbsp flour. Stir tog. flour, br sugar, baking soda & salt. In bowl combine egg, milk, oil, & van. Stir into dry ingrds; mix well. Toss rhubarb w/2 Tbsp flour, fold rhubarb into batter. Pour into 2 pans - 7 l/2 x 4. greased. Dot w/2 tsp butter & sprinkle w/2 tsp. sugar. Bake @ 350o - 35 mins. or til nicely brown.
