Rick Bridgman Cauli-Rice: One head of cauliflower (florets only); 1/3 cup chicken stock; 3tbsp olive oil or coconut oil; 2 cloves minced garlic; pepper/salt/onion powder as needed. Put florets in your blender or food processor and pulse until rice consistency. Sauté garlic in oil for 5 minutes, add rice cook through about 5-6 minutes, add seasonings & stir, add stock and simmer another 5-6 minutes! Serve! The chicken I sliced 2 chicken breasts length wise, added one can of organic, no salt added chopped tomatoes with basil, oregano, pepper, garlic & onion powder & baked at 350-365 for about 25-30 minutes!
