Roast Pork with Cumin and Ginger 1 teaspoon coarse salt 1/2 teaspoon ground black pepper 2 1/2-3 pounds boneless pork loin 1 tablespoon ground cumin 1 garlic clove, minced 1 1 inch piece fresh ginger, peeled and finely grated 1 tablespoon extra-virgin olive oil 2 tablespoons vegetable oil Instructions Preheat oven to 400F. Sprinkle salt and pepper evenly over pork. Let stand 15 minutes to 1 hour. Combine ground cumin, garlic, ginger and olive oil; mix well to form a paste. Heat vegetable oil in a shallow, ovenproof pan. Add pork and sear 3 minutes per side. Coat evenly with paste. Place pork in oven and roast 30 to 35 minutes, until pork reaches an internal temperature of 145F. Transfer pork to a platter and cover loosely with foil. Let rest 10 minutes. Slice pork on the bias.
