Rosehips are usually one of the last things I harvest every year. After a few good spells of hard frosts, I find that their flavor changes over from just tart and apple-like, to something more concentrated and sweet like strawberry fruit leather. Since they arent going anywhere at this point, I just take my bag with me every day when I go for a walk, and pick them until my fingers get cold, maybe 1/4 c. at a time. I like to combine rosehips with orange, making them into a thick paste (seems wrong to call it a jam). If it sets up thick enough, I mold it and call it rosehip membrillo.
