SANGRITA with JALAPEÑO infused TEQUILA Sangrita is the traditional chaser for shots of tequila. We at My Cajun Kitchen like to sip this drink, so make sure you use a top shelf tequila. It is such a lovely sipping shot drink..... Ingredients: 1/2 dried ancho chile, stemmed and seeded, may us all of it if you like it spicy. 1/2 cup fresh orange juice 1 cup tomato juice 2 tablespoons fresh lime juice 1 lime, quartered 1 tablespoon minced onion 2 tablespoons Tony Chacheres cajun seasoning, for seasoning the rim of the Sangrita glass 1/2 teaspoon Worcestershire sauce Salt and freshly ground pepper to taste What to do: In a small skillet, toast the ancho chile over moderate heat until it begins to blister, about 1 1/2 minutes per side. Transfer the ancho to a work surface to cool. In a blender, combine the orange, tomato and lime juices with the onion and Worcestershire sauce; crumble in the toasted ancho and puree. Strain through a coarse sieve. Season the sangrita with salt and pepper and chill for 20 minutes. To season the rim of the Sangrita glass, sprinkle the cajun seasoning into a saucer. Rub the rim of the glass with a quartered lime, dip rim into the cajun seasoning, add the Sangrita. Jalapeño infused tequila 1 fifth Tequila 1 large jalapeño pepper, sliced Wash and slice the jalapeño pepper, add to tequila. Will have a nice, spicy flavor within 2 hours. Bon Appetite!
