Accented with cranberries and caramelized pineapple/wasabi beurre blanc. Set atop sautéed garlic, shallots, tomatoes, sweet bell peppers, wilted spinach and couscous) ***Medallions of Beef Tenderloin (Two lightly seasoned and grilled medallions placed over an herb marinated grilled portabella; with cornbread cherry-apple stuffing, topped with sausage duxelles and Bearnaise) ***Pork Prime Rib (Lean loin of pork marinated seasoned with fresh sage, thyme, rosemary and garlic then slowly roasted.
