SHARZIS SNOWBALLS . I used to make the traditional Mexican Wedding Ball recipe and then wondered what would happen if I added something just a little different. Turns out different is pretty damn good! . 2 cups butter 4 cups powdered sugar 2 tsp vanilla 2-3 Tbsp Hazelnut, French Vanilla, Mocha, or whatever flavor powdered coffee creamer or cappuccino mix you prefer 4 Tbsp water 1/2 cup chopped walnuts or pecans . In bowl beat butter, sugar, vanilla, coffee creamer and water. Add a tbsp at a time of water if its too dry to make a dough. Add nuts and mix in well. . Roll dough in balls a little smaller than a whole walnut and place on parchment covered cookie sheets about 2 apart. . Bake at 350 degrees for 15-20 minutes until bottom of cookie is just starting to turn brown. Remove to rack and let cool. Once completely cooled, put into a food storage bag with powdered sugar, seal bag and careful turn up and down until all cookies are coated. . I freeze right in the bag with the powdered sugar. Right before putting out on a platter, I turn the bag a few times to be sure the cookies are coated well. These will freeze very nicely for a couple of months.
