SLICED YAM PIE pastry for a 9-inch two crust pie 5 to 6 cups very thinly sliced raw yams 1 cup packed light brown sugar 1/2 tsp salt 1/2 tsp cinnamon 1/2 cup butter or margarine 2 Tbs water or light cream Preheat oven to 350 degrees. Mix together cinnamon and salt. Line pie pan with half the pastry. Layer 1/3 of the yams, brown sugar, cinnamon mixture, and bits of butter in pie shell. Repeat layers two more times. Sprinkle water over top layer; cover with other half pastry; seal edges. Cut three 1-inch slits in top crust. Bake about 60 minutes or until potatoes are soft- check by gently poking knife through one of the slits. Serve warm or room temperature. Serves 6 to 8.
