SOUTHWEST CHICKEN & BEANS Leonora Burton 10" Dutch Oven 8 Bottom Briquettes 14 Top Briquettes Serves: 4-6 In a ten inch Dutch oven combine 1 can (15.25 ounces) kidney beans, drained; 2 cups frozen corn or 1 can (15.25 ounces) corn, drained; 1 jar (16 ounces) salsa; 1 can (10¾ ounces) condensed tomato soup; ½ teaspoon cumin; and 2 boneless skinless chicken breast halves, cut into large chunks. Cook with 8 charcoal briquettes on the bottom and 14 charcoal briquettes on the top for approximately 45 minutes. Using two forks shred chicken pieces. Replace lid and bake for another 15 minutes. Serve over steamed rice with a generous dollop of sour cream on top.
