SPAGHETTI IN CREAMY ARRABBIATA. Ingredients: 1. 250 gms Spaghetti. 2. 250 gms firm ripe Tomatoes, de skinned and chopped. 3. 2 Onions, chopped. 4. 1 tabsp Garlic, chopped. 5. 1 tsp coarsely crushed Pepper. 6. Salt, Sugar(optional), Paprika, Oregano to taste. 7. 3 Tabsp Olive Oil. 8. 1 cup heavy Milk. 9. Parmesan Cheese shavings, Pine Nuts and chopped Arugula leaves for garnishing. Method: 1. Heat Oil moderately and tip in the Onions and the Garlic. 2. Sauté till translucent, and add the Tomatoes. Cook till done. 3. Add the Pepper, Salt, Sugar, Paprika and Oregano to taste. 4. Cook for a few more minutes and let cool. 5. In the mean time boil Spaghetti till al dente. 6. Drain, and retain some liquid. 7. Add Milk to the Tomato mixture and grind coarsely. 8. Tip in hot Spaghetti in a large mixing pan, and pour the sauce on it. At this stage you may add a little bit of spaghetti Water if you feel the mixture should be a little runny to mix thoroughly. 9. Transfer to a serving dish, Garnish with Cheese shavings, Arugula leaves, and Pine nuts. 10. Serve hot with Braided bread roll. For the Braided Bread Roll: Ingredients: 1. 1/2 kg Maida. 2. 1 tsp Olive Oil. 3. 12 gms dry yeast. 4. Salt, and some Sugar to taste. 5. Water as needed. Method. 1. Dissolve Yeast in warm Water, Sugar, and keep aside. Mix Maida, Salt, Oil, and the Yeast solution. Knead using as much water as needed to make a smooth dough. 2. Cover and keep aside for 45 min. 3. After it proofs, punch it down, roll in six strands. Twirl into a braid, roll the Braid into a disc, and set on a tray. 4. Bake at preheated 180 deg till golden brown, (approx 10 minutes, depending on the oven). 5. Sprinkle with seasonings, and serve hot.
