SUNDAY SPECIAL Ingredients 400 gms mutton cut into small cubes (mutton cut from lamb’s shank is best) 250 gms wheat flour Salt as per requirement 1 tbsp oil 1 ½ tsp ginger, chopped 1 ½ tsp garlic, chopped 1 green chilli sliced 2 medium sized onions finely cut 3-5 medium sized tomatoes cut ½ tsp turmeric powder 1 ½ tsp coriander leaves ½ tsp red chilli powder 1 tsp garam masala powder A pinch of dhaniya powder Method 1. Prepare a soft dough of wheat flour, salt and water 2. Knead for ten minutes and set aside 3. Make into small balls and roll out each into circles of 1 inch diameter 4. Roast on a tawa (griddle). Keep aside 7-8 rotis thus prepared. 5. Heat oil in a different cooking vessel and add ginger, garlic, green chilli and cook for a few minutes 6. Add onions and fry until golden brown 7. Add tomatoes 8. Add the turmeric, coriander, dhaniya and red chilli powders and cook for 2-3 minutes more 9. Lastly add mutton (already pressure cooked for 15 minutes) and cook in the masala stirring continuously. Finish with garam masala and chopped coriander. 10. Spoon the mutton masala on top of the roti and serve hot garnished with coriander sprigs Cooking tips: 1. You can soften mutton fast and easily by adding a small slice of raw papaya 2. You can use double refined oil with 0 cholesterol content ( try Saffola or RCM’s rice bran oil) 3. You can keep rotis oil-free and this will give you only 40 calories ( per roti) 4.
