SUPERFOOD SUNDAY~ Your healthy eating assignment is to add BEETS to your salads this week. BEETS FAST FACTS: ~ Beets are a good source of folate and betaine. These two nutrients work together to protect the blood vessels. ~ Beets are loaded with potassium. A mineral important for heart health. ~ Beets contain magnesium and vitamin C. ~ Beet leaves are very nutritional and provide calcium, iron, vitamin A and vitamin C. You can make juice with them. ADD BEETS TO YOUR SALAD THIS WEEK: Beets can be served boiled, baked, steamed or shredded raw. I love shredded raw beets in salad. They are main ingredients in the Rainbow Wrap and Rainbow Salad recipes in the Live Your Healthiest Life book. Beet juice is also a good way to get more of this vegetable in your diet. HERE IS MY FAVORITE LUNCH RECIPE WITH BEETS: Rainbow Wrap~ I enjoy an Engine 2 sprouted wrap stuffed with every color raw vegetable I have in my refrigerator. 1 Engine 2 wrap Dijion mustard or your favorite hummus spread Spinach leaves shredded beets (raw) shredded carrots yellow peppers purple onion broccoli sprouts Spread the hummus or mustard on the wrap. Stack the vegetables in the order listed above. Add any of your favorite ingredients but try to use as many colors as possible. Enjoy! As always, please do your own research.
