Salami and tomato soup Ingredients 25g Salami 10ml Vegetable oil 50g Potatoes 50g Carrots 1/2 Onion 2.5ml Paprika 125ml Chopped tomatoes 75ml Tomato juice 225ml Water 1/2 Chicken stock cube Pinch fried rosemary 100g Cannellini beans Chopped parlsley( garnish) Method 1) Prepare the following ingredients. Salami- Skin and snap into small, even sized pieces using kitchen scissors. Wash, peel and dice potatoes and carrots. Onion- Peel and finely chop. Stock. 2) Heat the oil in a saucepan. Gently saute the potatoes, carrots, onion and paprika for 5 minutes until the onions are soft. 3) Add the chopped tomatoes, tomato juice, chicken stock and the dried rosemary. Bring to the boil, cover andf simmer for 20 minutes until the vegetables are tender. Add salt and pepper to taste. 4) Chop the parsley and set aside. 5) Remove from the heat and allow to cool slightly. Puree in a blender or pass through a sieve. 6) Return the soup to the pan and stir in the salami and cannellini beans. Heat thoroughly for 5 minutes. Taste the soup and adjust the seasoning if required.
