Salmon with Mushroom and Pepper Salsa (Lilac Route) Serves 4 4 salmon steaks (boned and skinned) 1 red pepper (deseeded and finely chopped) 1 yellow pepper (deseeded and finely chopped) 6 button mushrooms (finely chopped) ¼ cucumber (finely chopped) 2 tablespoons white wine vinegar Finely grated zest and juice from 1 lemon 1 red onion (finely chopped) Seasoning Preheat the oven to 200 deg C. Season the salmon steaks and place on a non-stick baking tray. Sprinkle with the lemon zest and juice, cover with tin foil and bake for 25 minutes or until the fish is thoroughly cooked. Make the salsa: In a bowl place the chopped peppers, mushrooms, onion and cucumber, pour over the white wine vinegar, mix thoroughly and season to taste. Serve salmon topped with the salsa.
