Sancocho by Ceila One pound beef oxtails or u can use short ribs or chuck. 1/2 pound bones with meat. one small smoke pork chop 2 green plantains peeled and quartered 4 pieces of yuca cut in cubes 4 pieces of pumpkin cut in big cubes one yautia or tarot root in cubes 3 ears of corn cut in small pieces -optional homemade sofrito 2 tablespoons of tomato paste 1 packet sazon goya with achiote 1/2 green pepper 1/2 red pepper one handful of cilantro salt to your taste adobo garlic powder oregano Directions: In a pressure cooker combine all the meat except for the pork chop, season the meat with adobo, garlic powder and oregano add one tablespoon of homemade sofrito and enough water to cover the meat, cook for 35 minutes. in a large pot cook for 20 minutes the plantain, yuca, yautia and pumpkin and water add one teaspoon salt. Now you can combine the meat with the plantains, yuca, yautia and pumpkin in the large pot, use the water from the meat and the viandas but make sure that you add enough water to cover over the top of the contents in the pot In a small frying pan add the pork chop in small pieces and when they turn a little brown add 2 tablespoons of the homemade sofrito, the tomato paste and the sazon Goya and let cook for one minute and then add it to the pot with the meat and the viandas, add salt to your taste, cover and cook in medium heat until it thickens.
