Saturday 7-20-13 SOUP-SALAD-SANDWICH SATURDAY CHIMICHANGA SALAD Tear a head of cleaned lettuce into bite-isized pieces in large bowl. Combine 1 can EACH yellow and white corn, drained; 15 oz can black beans, rinsed & drained; 2 T chopped jalapenos; 1 chopped onion; 1/4 c chopped fresh cilantro; 1/4 c chopped fresh parsleyi; and salt & pepper. Toss with lettuce. Combine 1/2 c ranch dressing and 1/2 c salsa. Pour over and toss. Add 1 1/2 c grated jack cheese and toss. Top with 1 avocado, cubed; and 1 tomato, seeded and chopped. Cover and chill 2-4 hr. Serve with tortilla chips. NT
